Why Your Homemade Curry Powder Never Tastes Like the Jar: Spice Blend Math Explained

Classic spice blends aren't a pinch of this and a dash of that — they're fixed ratios of parts. Scaling them by weight (not volume) is what makes a homemade blend taste consistent batch after batch.

Try to make your own curry powder from a recipe you found online and a kitchen scale you don’t quite trust, and you’ll usually end up with something that’s recognizably curry-flavored but not quite right — too heavy on cumin, not enough of the sharp turmeric bitterness that balances it. The frustrating part is that you followed the recipe. The problem almost never lives in the ingredient list; it lives in how the ratios were scaled, and in the fact that “a tablespoon of X” is not a fixed, repeatable unit the way a gram is.

A spice blend is a ratio, not a recipe

Every classic spice blend — curry powder, garam masala, taco seasoning, Cajun rub — is defined the same way underneath the ingredient list: each spice has a ratio part, a relative weight compared to the others in the blend. British-style curry powder, for example, runs roughly 4 parts ground coriander, 3 parts cumin, 2 parts turmeric, 1 part fenugreek, 1 part mustard powder, 1 part ground ginger, 1 part black pepper, and a half-part cayenne for heat. Those numbers don’t need to add up to any particular total — 4:3:2:1:1:1:1:0.5 could scale to 50 g or 500 g and taste identical, because what matters is the proportion between spices, not the absolute amount of any one of them.

The volume trap: why “1 tablespoon of cumin” lies to you

The recipe-following mistake almost always comes from measuring by volume instead of weight. A tablespoon of finely ground turmeric is denser and heavier than a tablespoon of flaky dried oregano or whole toasted cumin seed you just cracked in a mortar — two spices can occupy the same teaspoon and differ in actual mass by 30-50%. So when a recipe says “2 tsp turmeric, 3 tsp cumin,” it’s implicitly assuming a specific grind, freshness, and density for each ingredient that your spice jar may not match, especially if you’re using pre-ground store spices of unknown age versus something you just toasted and ground yourself.

Ratio-based scaling sidesteps this entirely by working in weight (grams), not volume. Worked example: scaling curry powder to a 100 g batch

Take the curry powder ratios above — coriander 4, cumin 3, turmeric 2, fenugreek 1, mustard 1, ginger 1, black pepper 1, cayenne 0.5 — and sum the parts: 4 + 3 + 2 + 1 + 1 + 1 + 1 + 0.5 = 13.5 total parts. To hit a 100 g batch:

coriander = (4 / 13.5) × 100 ≈ 29.6 g
cumin     = (3 / 13.5) × 100 ≈ 22.2 g
turmeric  = (2 / 13.5) × 100 ≈ 14.8 g
fenugreek = (1 / 13.5) × 100 ≈  7.4 g
mustard   = (1 / 13.5) × 100 ≈  7.4 g
ginger    = (1 / 13.5) × 100 ≈  7.4 g
pepper    = (1 / 13.5) × 100 ≈  7.4 g
cayenne   = (0.5/13.5) × 100 ≈  3.7 g

Every spice is just its ratio part divided by the sum of all parts, multiplied by your target weight. That’s the entire formula — no exponents, no lookup tables, just proportional division — but doing it by hand for eight ingredients is exactly the kind of arithmetic that invites a rounding mistake, especially once you start adjusting for heat or salt.

Heat and salt are multipliers on top of the base ratio, not separate ingredients

Two adjustments sit on top of the base ratio rather than inside it. First, a heat multiplier: spices marked as heat contributors (cayenne, chili powder, certain paprikas) get their ratio part multiplied by a heat factor — half for mild, 1.5× for hot, 2.5× for extra hot — before the proportional split runs, so bumping the heat setting doesn’t just add more cayenne, it recomputes every other spice’s share slightly downward to keep the total weight correct. Second, salt is toggleable: some blends (taco seasoning, Cajun rub, za’atar) include salt as one of the ratio parts, and turning it off removes that parts-value from the sum entirely before redistributing — useful for anyone managing sodium intake who still wants the same relative balance of everything else.

The order matters here: heat and salt adjustments happen before the parts are summed and divided, not after. If you tried to “just add extra cayenne” to an already-scaled 100 g batch, you’d throw off the total weight and dilute every other spice’s real proportion of the finished blend — which is a subtly different (and wrong) result compared to recomputing the whole ratio with cayenne weighted higher from the start.

Different blends, wildly different part counts

Not every blend has the same complexity. Chinese five-spice is a flat 1:1:1:1:1 ratio across star anise, cloves, cassia cinnamon, Sichuan peppercorn, and fennel seed — equal parts, easy to eyeball. Ras el hanout, by contrast, runs twelve separate spices at ratios from 0.5 to 2 parts each, which is far too many proportions to divide reliably in your head, especially once you’re also adjusting for a heat multiplier on the cayenne. The more ingredients a blend has, the more a small arithmetic slip in one spice compounds across the rest, since every spice’s share depends on the same shared total.

Storage matters as much as the ratio

Getting the ratio right only pays off if the blend still tastes like anything by the time you use it. Ground spice blends keep their potency for roughly six months stored airtight and away from light and heat — after that, the volatile aromatic oils that make cumin taste like cumin (rather than sawdust) fade noticeably, and no amount of correct ratio math will bring back flavor that’s already evaporated. Toasting whole spices briefly before grinding, when a recipe allows for it, also meaningfully sharpens the final aroma compared to using pre-ground spice straight from the jar.
