The '1h oven = 4h high = 8h low = 20 min Instant Pot' rule of thumb only holds for one dish type. Stews, roasts, beans and rice each convert at a different ratio — here's why.
Search “slow cooker conversion” and you’ll land on the same rule of thumb everywhere: one hour in a 350°F oven equals about four hours on slow cooker HIGH, eight hours on LOW, or twenty minutes in an Instant Pot. It’s a useful anchor, and it’s also only correct for one specific kind of dish — a general braise or casserole. Apply that same 8:4:0.33 ratio to a pot of dried beans or a whole chicken and you’ll either undercook it dangerously or turn it to mush, because the real conversion ratio depends heavily on what’s actually in the pot, not just which appliance you’re using.
Why one ratio can’t cover every dish
The oven-to-slow-cooker relationship isn’t a fixed physical constant like a temperature conversion — it’s an approximation of how long it takes a given food to break down or cook through at a given heat level, and that varies by what you’re cooking. A tough, collagen-heavy roast (chuck, brisket, pork shoulder) needs low, sustained heat over a long stretch for connective tissue to render into gelatin; rushing it on HIGH produces a drier, less tender result even if the internal temperature technically “got there” faster. Rice and grains, on the other hand, cook almost entirely by liquid absorption rather than long collagen breakdown, so they need barely any extra time at all in a slow cooker relative to an oven — and they cook unevenly in a slow cooker regardless, since the appliance wasn’t designed for even liquid absorption the way a stovetop or pressure cooker is.

Two things jump out. First, roasts and pulled pork use a 10:5 ratio instead of the general 8:4 — tougher cuts genuinely need proportionally more low-heat time relative to the oven baseline than a stew does, because the oven time itself is already compressed for a roast (a hot oven can push through in a way that a slow cooker fundamentally can’t replicate at the same fidelity). Second, rice’s Instant Pot multiplier (0.083, meaning roughly 5 minutes for every hour of “equivalent” oven time) is nowhere near the general 0.33 ratio — rice cooks by absorption, not by hours of heat penetration, so scaling it like a braise would wildly overcook it.
Worked example: converting a 2-hour oven pot roast
Say a recipe calls for a chuck roast braised 2 hours at 350°F, and you want to run it in a slow cooker instead. Using the roast preset (LOW ×10, HIGH ×5, IP ×0.75), not the general preset:
Slow cooker LOW = 2h × 10 = 20 hours
Slow cooker HIGH = 2h × 5 = 10 hours
Instant Pot = 2h × 0.75 = 1.5 hours (90 min)
Compare that to what the general preset would have told you — LOW ×8 = 16 hours, HIGH ×4 = 8 hours — and you can see the roast preset adds real time on both ends. Picking the wrong dish-type preset here doesn’t just shift the estimate by a few minutes; it’s the difference between a roast that shreds apart and one that’s still tough after the “equivalent” time has passed, because the general preset understates how much a collagen-heavy cut benefits from those extra hours at low heat.
The direction of conversion matters too
The tool works in both directions — oven-to-slow-cooker and slow-cooker-to-oven or Instant Pot — and the underlying math is the same ratio applied in reverse: whatever time you enter gets divided by the “from” appliance’s multiplier to back out an equivalent oven-hours baseline, then multiplied back out to every other appliance’s ratio. So if a recipe gives you “6 hours on LOW” for a stew, the converter first solves 6 / 8 = 0.75 equivalent oven hours, then reports HIGH as 0.75 × 4 = 3 hours and Instant Pot as 0.75 × 0.5 = 0.375 hours (22.5 minutes) — the stew preset’s own ratios, not the general ones, driving every step.
Two adjustments the ratio math doesn’t capture
Two practical corrections sit outside the pure time-ratio math and matter just as much as picking the right dish preset. First, liquid volume: a slow cooker’s sealed lid traps nearly all moisture, so a stovetop or oven recipe converted straight across typically needs its liquid reduced by about 25% — add the oven recipe’s full liquid volume to a slow cooker and you’ll end up with a thin, diluted braise by the time it’s done, since almost none of it evaporates the way it would in an open pot or oven. Second, pressure release time: any Instant Pot conversion should add roughly 10-15 minutes on top of the computed pressure-cook time to account for natural pressure release before you can safely open the lid — a number the cook-time ratio itself doesn’t include, since it’s a safety/venting step rather than a cooking-time equivalence.
When exact timing is safety-critical, verify with a thermometer
Cook-time ratios are estimates built from typical cut sizes and starting temperatures — a 6 lb whole chicken and a 4 lb one won’t hit doneness at exactly the same converted time, and neither will a roast started cold from the fridge versus one that’s come up to room temperature first. For anything where undercooking is a food-safety risk (whole poultry, pork, beans that need to soften fully before salting), treat the converted time as a starting estimate and confirm doneness directly — 165°F at the thickest part of a chicken thigh, for instance, regardless of what the clock says.
